Sesame Red Onion Dressing
1/2 red onion, shaved
1/2 cup balsamic vinegar
1/2 cup sugar
1/4 cup water
1 cup olive oil
salt and pepper to taste
sesame seeds
Dissolve sugar in the vinegar over medium heat; add water and olive oil. Add shaved red onion (I use a Cuisinart), salt and pepper. Place sesame seeds in an uncoated fry pan and heat over medium heat until lightly toasted. Add to dressing. Toss with Spring Greens, crumbled goat cheese, and craisins. Dressing is best served warm.
